Executive Chef Josh Smith-Thirkell’s impressive culinary career spans over 15 years. Leading the kitchen brigade in signature and award-winning restaurant, Capitol Bar & Grill. Josh brings an approachable elegance to every dish, ensuring the integrity, flavour, and form of hero ingredients are maintained.
Josh’s passion and dedication to the culinary world have earned him several accolades, including the People’s Choice Modern Restaurant 2023 for WineRoom – Out in Canberra and a mention in the Good Food Guide 2023 for WineRoom.
